Lost
Some of you already know we are big fans of the Television series "LOST".
We missed the first 2 seasons, so we ordered both series from netflix and had LOST marathons that would end up being 7 hours or more.
We had a lot of catching up to do!
That's how we would spend some of our Sundays! haha This coming from someone who isn't even into TV. What can I say...were hooked.
To my surprise, there seems to be alot of LOST Blogs/journals online. Some Love it, Some hate it.

Remember Being A Kid?
I really enjoyed reading this. So much so, I thought I'd share it.
Being a kid isn't always great — OK, it can stink
Sometimes I have to remind myself it wasn't always THAT great being a kid. For instance, it stinks to be a kid when you're getting picked on at school or when you're in a fight with your friends and they're passing snotty notes about you to other people. It stinks when all your friends are in the high reading group and you're not, and it also stinks when you don't understand the math worksheet even though really stupid boys do.
It stinks when the boy you love doesn't love you back because he already loves the girl who has a chest. It stinks when you get caught doing something you shouldn't do and the principal hauls you into the office to call your mom. Again.
Here are some other things that stink when you're a kid. Losing school library books, especially ones you didn't like anyway. Waiting for your parents while they talk to people after church. Forgetting your homework. Doing stupid geography reports on countries you never heard of because somebody else already got the country you wanted, i.e. "Switzerland." Having to eat stuff you hate, like oatmeal. Being the last kid on the hill with lace-up ski boots. Getting a home permanent because your mom thinks you'll look cute with one.
Wait! There's more! Missing the bus. Listening to adults fight. Going to bed in the summer when it's still light outside. Watching what your grandpa wants to watch on TV, such as the news or "The Lawrence Welk Show." Not having your own money. Not having your own transportation because your brother left your bike outside and it got stolen — just like your dad said it would.
For me, one of the worst things about being a kid was that I didn't always know how to say what I meant, especially to adults. Let me give you an example. When I was 4 or 5 years old, I went with my parents to Liberty Park, where I struck up one of those quick kid friendships with a tiny girl my own age. We chased around for a while, after which we hauled our happy sweaty selves over to the water fountain to get a drink. My new best friend bent over the spout first, and I turned the handle up for her because I wanted to help. Only oops! The water gushed into her face and soaked her shirt.
The next thing I knew her mother was swooping down on me, berating me for getting her daughter wet. I wanted to apologize, to tell her it was an accident. But I couldn't find the words, so I stood there feeling shame pump through my veins. The mother grabbed her daughter by the wrist and marched her far, far away from me, and as I remembered the whole episode on our way home from the park, I started to cry.
"What's the matter?" my mother asked. I wanted to tell her. Only I couldn't find the words. Instead, I just buried my face in the car seat and cried.
So, as I was saying, it wasn't always that great to be a kid.
I was, in fact, saying this to myself as I stepped out onto the porch this morning where I found my cat, Coco, sprawled on the welcome mat. Coco, who isn't a year old yet, is pretty much like a hummingbird — always in motion. So to see her lounging around like that amused me. Better still, she let me pick her up. Immediately she climbed onto my shoulder and buried her head in my hair and purred like a motor. She smelled like sun and cut grass and sidewalk — just like my old cat Ginger used to smell when she rode around on my shoulder.
And suddenly I was 10 again, and another voice inside me said, "Actually, it was that great to be a kid."

HOT AND SOUR PUMPKIN SOUP
1 large onion, coarsely chopped
Cook onion, garlic, and ginger in 1 tablespoon oil in a 5-quart heavy pot over moderate heat, covered, stirring occasionally, until onion is softened, about 4 minutes. Add pumpkin and wine and boil, uncovered, until wine is reduced by about half, about 5 minutes. Stir in stock and simmer, covered, until pumpkin is tender, about 20 minutes.
Heat remaining tablespoon oil in a 10-inch heavy skillet over moderately high heat until hot but not smoking, then sauté lemongrass, galangal, and chiles to taste, stirring, until lightly browned, about 1 minute. Remove from heat.
Purée pumpkin mixture in batches (use caution when blending hot liquids) and return to pot. Stir in lemongrass mixture, lime leaves, lime juice, fish sauce, and sugar. Simmer, uncovered, 20 minutes. Pour soup through a sieve, discarding solids, and season well with salt and pepper.
Note: • Soup can be made 2 days ahead and cooled, uncovered, then chilled, covered.

Coming from the dried stigmas of the saffron crocus, it takes 75,000 blossoms or 225,000 hand-picked stigmas to make a single pound which explains why it is the world’s most expensive spice. According to Greek myth, handsome mortal Crocos fell in love with the beautiful nymph Smilax. But his favours were rebuffed by Smilax, and he was turned into a beautiful purple crocus flower. A native of the Mediterranean, saffron is now imported primarily from Spain, where Moslems had introduced it in the 8th century along with rice and sugar. Valencia coup (coupé meaning “to cut” off the yellow parts from the stigmas) saffron is generally considered the best, though Kashmir now rivals this reputation. Saffron is also cultivated in India, Turkey, China and Iran. The name is from the Arabic word zafaran which means ‘yellow’. The French culinary term safrané means ‘coloured using saffron’. Its colouring properties have been as prized as its unique flavour. In India its colour is considered the epitome of beauty and is the official colour of Buddhist robes. Saffron was used to scent t baths and public halls of Imperial Rome. Pliny wrote that saffron was the most frequently falsified commodity, which has been true throughout history. Low grade saffron has even been treated with urine to give it colour, though it has most often been falsified with dried calendula or marigold. The Romans initially brought saffron to England, though it was lost to them in the Dark Ages. It is claimed that in the 14th century a pilgrim to the Holy Land, smuggled back one crocus bulb in a hollow staff from which all English saffron supposedly descends. It is grown in great quantities in Essex, especially in a town called Saffron Essex, whose coat of arms includes three saffron crocuses. Francis Bacon wrote “it maketh the English sprightly”.
Spice Description
Saffron is the three stigmas of the saffron crocus. They are delicate and thread-like, each measuring 2.5 - 4 cm (1 -1.5 in). Its colour is a bright orange-red, and in high quality saffron this is uniform. I, like everyone else is tried of the rain!
Yesterday was sooo beautiful! Will it ever end???
I made sushi for everyone, I left for Andrews hockey game early to go to Jim & Hedy's to drop off their plate. I left pretty early for Andrews game we didn't make it to San Jose. I got stuck in the Bank Robbery high speed chase on 680!! $$$ all over the freeway!
Needless to say, he missed his game. Saturday Is the last one of the season.
We all turned around and went home then I made dinner for Nicole, Andrew, Katie, AJ & Ian.
Today I've just been cleaning and doing laundry.

What's Cookin'?
Fall River Clam Roll
I made these today. I subsituted the fresh clams for a can of baby clams I drained. Yummm
For the tartar sauce:
1 egg
1 tablespoon minced garlic
2 tablespoons fresh lemon juice
1 tablespoon chopped fresh parsley leaves
1 tablespoon capers
2 tablespoons chopped green onions
1 cup olive oil
1 tablespoon Creole or whole-grain mustard
1 teaspoon salt
1/4 teaspoon cayenne pepper
4 dozen Ipswich clams, shucked
Essence, recipe follows
1 cup milk
Vegetable oil, for frying
1 cup cornmeal
1 cup all-purpose flour
4 hot dog rolls
Melted butter, for brushing the rolls
1 cup shredded lettuce
2 pieces parchment paper, cut in half
Vinegar, for serving
Lemon wedges, for serving
Potato chips, for serving
Make the tartar sauce by combining the egg, garlic, lemon juice, parsley, capers and green onions in a food processor. Puree for 15 seconds. With the processor running, pour the oil through the feed tube in a steady stream. Add the mustard, salt, and cayenne and pulse once or twice to blend. Transfer to a non-reactive bowl and refrigerate for at least 1 hour before using. Best if used within 24 hours.
Season the clams with Essence. Cover the clams with the milk and refrigerate for 1 hour.
Preheat a deep-fryer or several inches of oil in a deep saucepan to 360 degrees F.
Remove the clams from the refrigerator and drain completely. In a shallow bowl, combine the cornmeal and flour. Season with Essence. Dredge the clams in the seasoned flour, coating each clam completely. Place the clams in a wire basket and shake the clams, removing any excess flour. Fry the clams in the hot oil until crispy and golden brown, about 3 to 4 minutes. Remove the clams using a slotted spoon or strainer and drain on a paper-lined plate.
Open the rolls and brush lightly with melted butter. Place, cut side down, in a hot skillet and cook until lightly toasted, about 2 minutes.
To serve, spread tartar sauce on both sides of each of the rolls. Divide the clams evenly among the rolls. Top with shredded lettuce, roll sandwich in parchment paper, and slice in half. Serve with vinegar, lemon wedges and potato chips.
Emeril's ESSENCE Creole Seasoning (also referred to as Bayou Blast):
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme
Combine all ingredients thoroughly.

Cookies
Here is my favorite Chocolate Chunk Shortbread Cookie recipe.
3/4 Butter, softened
1/2 C Confectioners (powered) sugar
1 C Flour
3/4 of a bag of Nestle's "real semi sweet" Chocolate chunks
In mixing bowl cream butter and sugar. Gradually adding the flour. Stir in the chocolate pieces.
Place a tabelspoon size of cookie dough on an ungreased cookie sheet, about 2 inches apart or so.
Bake at 350 for 10-12 mintues.
I normally cook them until I barely see them browning on the bottoms of the cookies. I take them out of the oven but leave them on the cookie sheet for a minute or two, then I slide them off onto a wire rack. Being very careful not to make them fall apart. If they feel like they will fall apart leave them on the hot cookie sheet until they harden a bit.
